Here's the problem. You need to distinguish between words that occur in different sentences and words that occur in the same sentences, that is, the difference between them and which.

In different sentences, you need them:
There are two groups in this school. One of them is all male, and the other (one) (is) all female.

In the same sentence, you need which:
There are two groups in this school, one of which is all male, and the other (one) (is) all female.

Note that "is" is optional. "one" is also optional. My choice would be to omit both.

Simpler would be: There are two groups in the school, one all male and the other all female.
