What is the red X next to Bob Gremore's name mean?

No it's not acceptable. Sometimes people make mistakes but this doesn't mean it is acceptable. Did you get this from a written script or from hearing it? If you heard it, it is more likely that the word was 'does' but slurred/shorted (as often happens in speech) so that it sounds almost identical to 'What's'.

It is a difficult question when someone asks "Is this accepted in daily speech?" The answer on one hand is "No, if you wrote this out for someone to say, it's clearly incorrect and not acceptable."

But on the other hand, when people speak, they speak without planning. They start to say something like "What is that red X doing there?" and they change directiong and end differently

But I do agree with you that people do make mistakes but as long as it's understandable it's ok in daily speech.

If you have a written script then it's possible it is a typo. Is this an official script or more of a transcription of the show?

I extracted the script from the subtitle file and I'm 100% sure Manica said "is" very clearly.

It's a line from the 6th episode of Season 10.

Hmmm...subtitles can often be inaccurate.

Still, maybe they just wanted to create a natural type of 'change my mind about what I'm saying halfway through a sentence' piece of dialogue. Also, Rachael is not exactly a very bright character really. Monica would never have said that!
