in this text....There are many evil writings put forth of late which take occasion, on account of the assembling of the peasants, to cast scorn upon the Gospel, saying: “Is this the fruit of the new teaching, that no one should obey but all should everywhere rise in revolt, and rush together to reform, or perhaps destroy entirely, the authorities, both ecclesiastical and lay?” The articles below (Note: there is an article below this) shall answer these godless and criminal fault-finders, and serve, in the first place, to remove the reproach from the word of God and, in the second place, to give a Christian excuse for the disobedience or even the revolt of the entire Peasantry.

Recently, evil writings have been distributed or published. (Not sure which historical period this is taken from)

which take occasion, on account of the assembling of the peasants,
The peasants have been getting together in groups.This fact has given the writers an excuse to say what they want.

The writers are criticizing the Gospel. They are using the fact of the peasant's assemblies to do so

Fruit = result.

The "new teaching" is having bad results, according to these writers. "All," meaning the peasants, are rising in revolt.
and rush together

rush together = meet in a hasty or hurried fashion
to reform, or perhaps destroy entirely, the authorities,

( this is what the peasants are setting out to do in those evil meetings)
both ecclesiastical and lay?”
ecclesiastical = church authorities
lay = secular authorities (the government of the town or country)
