I have never heard the "simple subject" discussed in other than a grammatical context. I'm puzzled by your choice of a forum and subject title. I should think the dictionary would be your best bet if you're not interested in a functional definition.

Otherwise, from a grammatical point of view, a subject is worthless and difficult to understand without a predicate, or verb.

Look for the verb, and try to understand what sort of action is being described, or what kind of statement is being made. With that in hand, look for the actor. Who is doing this thing? Whom or what is the statement made about?

This should be the subject. The discriptions of the subject (not the action) go to make up the complete subject.

The simple subject is the noun with all it's modifiers and modifying phrases stripped away.
