1. Is this standard to say:
"My departed grandmother used to say never to expect life to work out exactly how we have planned, since it had a mind of its own."
2. And is this sentence correct:
"I don't remember my grandmother ever saying anything that stuck with me."

" I would not say departed there. "Used to" takes care of that when speaking of grandmothers. If she was still alive, it would be "My grandmother says".
