Since Versus Ever Since
What's the difference between the two?
I wrote here two examples:
I've known him since 1980.
I've had issues with this computer ever since I purchased it.
I used since in the first sentence and ever since in the second. In this way it sounds natural to me.
However, I've actually never thought if there's a real difference between the two. I mean: if I wrote
ever since in the first sentence, would it be wrong?
When can we replace them with each other?

Yes, they are grammatically interchangeable, but 'ever since' is both more informal and more emphatic.
