If I use a past tense verb after the verb "I", does the rest of the sentence need to be changed as well? For instance,
I just wanted to see how you have been doing. Should it be" I just wanted to see how you had been doing"?

It doesn't have to be, I think. eagerness I just wanted to see how you have been doing Sounds acceptable to me, say, on the phone.
