Nobody can see you there. Are you hungry?’‘Yes, I am,’ Alex said, ‘Very.’‘Well, I’ve got some sandwiches. Here you are. Now, get in the back quickly. Before we see a police car.’The lorry drove slowly south. Alex ate all the driver’s sandwiches and then slept like a dead man.  1. Why did the driver offer Alex something to eat? Because he said he was very hungry.2. What was the driver’s concern? A police car.3. How many of the driver’s sandwiches did Alex eat? All of them.Thanks in advance.

Thinking Spain1. Why did the driver ~~offer~~ give Alex something to eat? Because he said he was very hungry.
Note: I think offering is a way of asking. In that sense, the driver offered Alex something to eat when he asked him whether he was hungry, not when he handed him the sandwiches.

2. What was the driver’s concern? A police car.
I would answer:
-A ploice car showing/appearing.
-Coming across a police car.

3. How many of the driver’s sandwiches did Alex eat? All of them.

In this question (or any other question, actually), I wouldn't ask How do you know, as I believe the only accurate and true answer to that is, I read the passage.

I would say, Explain/Support your answer, but since you don't want your questions to sound like orders, you can ask:
Did Alex sleep lightly? How was that? (Or, How would you explain that)
No, he didn't; he slept like a dead man.

Suggestions:
How did Alex sleep? He slept like a dead man.
What did Alex do after he ate the sandwiches? He slept (like a dead man).
Was Alex hungry? How was that? Yes, he was; he ate all the sandwiches.
Was Alex tired? How was that? Yes, he was; he slept like a dead man.

Thanks a lot for you reply and suggestions. They are great ones!

'Explain your answer.', sounds perfectly fine to me.
As far 'Support your answer' is concerned, I'd expect it to be followed with something else. 'Support your answer with...'.
It doesn't sound like an order to me; I just ask my students to do - a request.
