Modify

I always hear 'an adjective modifies a noun', but I thought adjective means 'edit', not 'describe', which is clearly the intended meaning here!

"Modify" carries the meaning that an adjective adds to a noun, not "edit". It is like a noun has a state and an adjective decorates it. But an adjective doesn't change anything, it just adorns a noun in order to flesh it out a little.
