Technically b) is correct but I would not use it. I would change the order and say: My parents and I visited the Tower.

Thinking Spaina) Me and my parents visited the Tower.
Remove 'and my parents', and the sentence reads: Me visited the Tower.

I am sure you know that it should be I visited the Tower.

Hence, the correct sentence is My parents and I visited the Tower.
