Like that / that way
Would you consider both sentences correct? For some reason #2 sounds a lot better to me, but I can't explain why.
#1 Her mother baked her a gluten free cake and LIKE THAT she could eat it and feel the same as all her friends.
#2 Her mother baked her a gluten free cake and THAT WAY she could eat it and feel the same as all her friends.

I would divide #2 into two sentences.
Her mother baked her a gluten-free cake. That way she could eat it and feel the same as all her friends.
