messier42, I just don't know where to begin. I don't think you've thought this through.

1. You have two sentences, though you have punctuated them as if they were one.

I can teach you the language. Either we could meet up in the spare time or through message or email.

2. either almost always connects two things, and you have three here. (Maybe.) See underlines above.

3. You're saying "we could meet up" OR "through message". It sounds like you left out something. It's like saying

We could go to a restaurant or at night.

The two things connected by "or" are not comparable. You can meet up or not meet up. You can go to a restaurant during the day or at night. You can communicate by phone or by email. But you can't "meet up or through message".

4. You seem to be contrasting "message" and "email", but when you send an email, you're sending a message, so what two things are you talking about here? Maybe you need to specify a little more clearly what you mean here.

Better, but you still haven't made a parallel kind of connection with the "or". You need something like this:

Either we could meet up in our spare time, or we could exchange texts or emails.

You don't really need "Either" at the beginning, but it's OK.

If you will be "exchanging", then there certainly will be more than one text or email, so you need the plurals.

If you want to think about it anymore, you might consider whether you really mean that you are going to meet up in your spare time, but not exchange texts and emails in your spare time. It seems that you would be doing any of those things in your spare time, so it may be unnecessary even to mention it.

We could meet face to face or exchange text messages or emails.
