Those general kinds of sentences are right, but the specific sentences you wrote are not all completely right.

¨I'm still expecting ~~for~~ what you said to be wonderful¨ No "for". The meaning is mysterious.
¨That is what she believes to be fair¨ OK "believes is fair" is better.
¨I am so curious about what they will scream to be heard¨ No "so". The underlined part makes no sense.
¨Nobody cares about what I believe to be real¨ OK, though awkward. "what I believe is real" is better.

1. You don't need quotation marks around your example sentences. It is more standard to italicize them, though you are not required to that.
2. You do need a period at the end of each sentence, however.
3. The verb "believe" may have "to be" as you've used it, but that usage is limited. "said" and "screamed" cannot be used in that construction.

I believe his statement to be true. But not *I said his statement to be true.
