How can I understand "a land of cavaliers and Cotton Fields."?
If you say a land of woman and man, I can understand.
If you say a land of happiness and sadness. I can understand.
But, what does "a land of cavaliers and Cotton Fields" mean?

Cavaliers simply means gentlemen in that sentence. You know what cotton fields are and the American South is full of them. BTW cotton fields shoud not be capitalized.
