I assume you are asking about forming the third-person present tense of verbs. The rules are very similar to those for forming plurals of nouns. Surely on the internet there should be a definitive list of rules, but for some reason I can't seem to find one that looks good and complete.

If the verb ends -ss, -sh, -ch, -zz, -x, add -es:

fuss -> fusses

dash -> dashes

catch -> catches

buzz -> buzzes

tax -> taxes

If the verb ends -s, add -ses:

gas -> gasses

If the verb ends -y then replace -y by -ies:

carry -> carries

If the verb ends in -o then sometimes you add -es, but in other cases -s is also accepted:

veto -> vetoes

lasso -> lassoes / lassos

I don't know how this rule is decided, and with less common verbs I usually need to look in a dictionary to check.

In all other cases (apart from irregular verbs such as have, and any other special cases that I may have forgotten!), just add -s.
