Hello,
What is the difference between: "He encouraged them to draw up/write a list of half a dozen uses for the property."? Do we draw up documents or we just write them? I usually use write. Is that wrong?

"Draw up" means to produce a particular kind of document, a draft of a proposal. Here of proposed uses for a piece of land.

draw up sounds rather legalistic and formal.
eg The lawyer drew up a contract.
The verb write is much, much more common.

Thanks, Clive. That's an interesting example. We all have computers and we can't really "write a contract", can we? We are more likely to prepare a contract or just print one out, aren't we? I am guessing now.

I think you may perhaps be confusing write with hand-write or write by hand.
eg I am writing this email to you, but I am not writing it by hand. If I write by hand, I use a pen or pencil.
Other verbs are of course possible. eg prepare, print out, produce, type
