Cut off Vs Cut in
When someone means to interrupt, can we use the phrases 'cut someone in' and 'cut someone off' interchangeably? E.g., "I didn't mean to cut you off/ cut you in". Thanks.

There is not a huge difference. Here's the idea. cut someone off eg Tom cut Mary off.

If you want to be less idiomatic, you can use the verb 'interrupt'.
