I agree with Mister Micawber about your Christmas time sentence.

However, the sentence structure may be correct in other situations:

I don't go to school in the summertime.
It all depends on the context.

I don't think a hard rule, but aside from set phrases like 'on the weekend' or 'at Christmas', the period must be of several days' duration if you use 'in'.
