Can someone please check my grammar?

1. Is it gramatically correct to say that you "don't believe in capture" when stating your opinion that you don't believe in putting criminals in jails?

2. Is it gramatically correct to say that "life is learning to make peace with ourselves"?

Both your examples are grammatically correct. It would be a good idea to express them as complete sentences when asking this particular question. "Capture" is probably not the noun you want.
