Are these sentences correct?
a) "I will be waiting until the service has been fulfilled."
b) "I will be awaiting until the service has been fulfilled."

Hard to say. Offhand, I can't think what it means to fulfill a service. That aside, the first sentence is fine, but "awaiting" is wrong in the second one. Usage dictates "I will be awaiting fulfilment of the service."

This is more likely:
I will remain in the waiting room until you are finished servicing my car. Let me know when it is complete.
