How is the correct form to talk about this 2005 year?

And for me, it's 'two thousand and five'. There are absolutely no rules; people use both (your #2 & #3 are rare if extant); we'll just have to see how the names of the century's years develop. I think that many people will continue to call it 'two thousand and five' until we reach about 2010, when most everyone will switch over to the easier 'twenty ten'.
